That’s right…Taco Tuesday at Barbie’s food truck. Barbie offers three soft- or hard-shelled tacos with your choice of ground beef or chicken, smothered in your favorite toppings. Lettuce, tomatoes, shredded cheese, sour cream, salsa, onions and cilantro are all available if you like. This in addition to a corn chips and salsa appetizer, all for six bucks! Hard to beat and impossible to resist, in my Mexican food loving opinion!
Barbie’s is located on East Main Street in Quartzsite next door to the Coyote Fresh grocery. She offers many other delicious items on her menu. But if it’s Tuesday, your one and only choice is tacos and she serves dozens of them!
